I used to flip a pack, glance at calories, and put it in the basket. That worked… until I started noticing the same “healthy” granola bar listing sugar three different ways, stuffed near the top of the list.
Reading a food label is less about chemistry degrees and more about knowing where manufacturers hide the stuff you care about. Here’s the practical version I wish someone had written for me years ago.
Start at the back, not the claims on the front
Front-of-pack is advertising. “Natural”, “high protein”, “no artificial colours” can all be true and still leave you with a product that is mostly sugar, cheap oils, or filler starches.
On the back (or side), you’re looking for two blocks:
- the nutrition panel — energy, fat, sugars, salt/sodium, sometimes fibre
- the ingredients list — what is actually in the thing, sorted by weight
If those two feel like they tell different stories (low fat on the front, first ingredients sugar and palm oil on the back), trust the list.
Ingredients are ordered by weight — use that
The first three ingredients usually dominate the product. A “fruit bar” that starts with sugar, syrup, and rice flour is a candy bar with a nice photo.
Sugar is not always called sugar. Common aliases:
- glucose syrup, corn syrup, high-fructose corn syrup
- dextrose, maltose, sucrose, fructose
- fruit juice concentrate, maltodextrin (not always “sweet”, but often behaves like refined carbs)
If two or three of those show up early, that pack is sweet even if the packaging wears earthy colours.
Allergens and “may contain”
In the EU, UK and many other markets, major allergens must be flagged (often in bold in the list). “May contain peanuts” is usually about shared equipment — if you’re highly sensitive, treat those seriously rather than as legal fluff.
E-numbers and long codes
Not every E-number is “bad”. Vitamin C is E300. Citric acid is E330 and shows up everywhere. The ones people fretted about for kids’ hyperactivity were often artificial dyes (think bright yellows/reds in sweets).
What matters more than memorising every code: is the product basically food, or a chemistry set with some flour? Very long lists full of emulsifiers + dyes + flavours + stabilisers usually mean highly processed.

A two-minute supermarket habit
- Ignore the marketing headline.
- Check the first three ingredients.
- Scan for sugar aliases and hydrogenated oils.
- Check salt and added sugars if you track those.
- Check allergens against your list.
That’s already better than 90% of rushed shopping.
